Thrifty Chicken

So our local grocery store was having a fantastic sale on Chicken Leg Quarters this week (.47 a pound!!). I quickly scooped up several packages and brought them on home. Problem is, I normally cook with chicken breasts, and the bone-in chicken seems a little daunting. Never fear! I skinned all the quarters (8 to begin with), packed them into my crock pot, and cooked them on low for 7 hours. Once they had cooled somewhat, I de-boned and shredded them. Now I will freeze them and pull out what I need for future recipes calling for cooked chicken. Holla!
